4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1 cup feta cheese, crumbled

1/2 cup sun-dried tomatoes, chopped (optional)

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon salt

1/4 teaspoon black pepper

3 tablespoons olive oil

1 tablespoon lemon juice

Toothpicks or kitchen twine (for securing the chicken)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a medium bowl, combine the chopped spinach, feta cheese, sun-dried tomatoes (if using), minced garlic, oregano, basil, salt, and pepper. Mix well until the ingredients are evenly incorporated.

      Prepare the Chicken Breasts: Place each chicken breast between two sheets of plastic wrap. Using a meat mallet, gently pound the chicken to an even thickness of about 1/2 inch. This will help it cook evenly.

        Stuff the Chicken: Spoon a generous amount of the spinach and feta mixture onto one side of each chicken breast. Be careful not to overfill. Fold the chicken over to enclose the filling and secure it with toothpicks or kitchen twine.

          Sear the Chicken: In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the stuffed chicken breasts and sear for about 3-4 minutes on each side, until they are golden brown.

            Season and Bake: Drizzle the lemon juice over the top of the chicken, then transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/75°C).
