Ingredients

2 ripe bananas, mashed

1 cup rolled oats

1 cup milk (dairy or non-dairy)

1/3 cup honey or maple syrup

1/4 cup unsweetened applesauce

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup walnuts or pecans, chopped (optional)

1/2 cup chocolate chips or dried fruits (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it with cooking spray.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, milk, honey (or maple syrup), applesauce, eggs, and vanilla extract. Mix well until all ingredients are fully incorporated.

Combine Dry Ingredients: In a separate bowl, whisk together the rolled oats, baking powder, baking soda, cinnamon, and salt. Ensure all dry ingredients are evenly mixed.

Fold Together: Gradually add the dry mixture to the wet mixture, stirring just until combined. Be careful not to overmix. If desired, fold in the chopped nuts and chocolate chips or dried fruits for added texture and flavor.

Fill Muffin Cups: Evenly distribute the batter into each muffin cup, filling them about 3/4 full.

Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.

Cool Down: Once baked, remove the muffin cups from the oven and let them cool in the tin for about 5 minutes. Then transfer them to a wire rack to cool completely.

Enjoy: Serve warm or store in an airtight container for up to 5 days. These muffin cups make a perfect breakfast or snack option!
