Frozen Chocolate Peanut Oat Bars

2 cups rolled oats

1 cup creamy peanut butter

1/2 cup honey or maple syrup

1/2 cup dark chocolate chips (plus extra for drizzling)

1/4 teaspoon salt

1 teaspoon vanilla extract

1/2 cup chopped nuts (almonds or pecans) optional

1/4 cup shredded coconut optional

Instructions
 

Prepare the Base: In a large mixing bowl, combine the rolled oats, creamy peanut butter, honey or maple syrup, salt, and vanilla extract. Stir until all the ingredients are well mixed into a sticky mixture.

    Add Optional Mix-Ins: If you’re using chopped nuts or shredded coconut, fold them into the oat mixture to add texture and flavor.

      Line the Pan: Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later.

        Spread the Mixture: Pour the oat mixture into the prepared baking dish. Use a spatula or your hands to evenly spread and press the mixture down firmly into the corners and edges of the dish.

          Melt the Chocolate: In a microwave-safe bowl, place the dark chocolate chips. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth (about 1-2 minutes total).

            Drizzle the Chocolate: Pour the melted chocolate over the pressed oat mixture in the baking dish, using a spatula to spread it evenly. You can also leave some of the chocolate to drizzle over the top later for a decorative touch.

              Freeze: Place the dish in the freezer for at least 2 hours or until set.

                Cut the Bars: Once set, remove the dish from the freezer using the overhanging parchment paper. Transfer to a cutting board and cut into bars or squares.

                  Drizzle with Extra Chocolate (Optional): Melt any remaining chocolate and drizzle it over the cut bars for extra indulgence.
