Ingredients

2 cups fresh or frozen strawberries, hulled

1 cup coconut yogurt (or regular yogurt if preferred)

1 tablespoon honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1/2 cup unsweetened shredded coconut (for topping)

Fresh mint leaves (for garnish, optional)

Instructions

Prepare the Strawberries: If you’re using fresh strawberries, wash and hull them. If using frozen strawberries, allow them to slightly thaw for about 10 minutes for easier blending.

Make the Strawberry Puree: In a blender, combine the strawberries, honey or maple syrup, and vanilla extract. Blend until smooth, adjusting sweetness if necessary. You can leave some chunks for texture if preferred.

Combine with Yogurt: In a mixing bowl, fold the strawberry puree into the coconut yogurt. Stir gently until well combined, but ensure some swirls of the strawberry mixture remain for a marbled effect.

Prepare the Cups: Line a muffin tin with paper liners or use silicone cupcake molds. Spoon the coconut-strawberry mixture evenly into the cups, filling them about 3/4 of the way full.

Add Toppings: Sprinkle the shredded coconut on top of each cup for added texture and flavor.

Freeze: Place the muffin tin in the freezer and freeze for at least 4 hours, or until the yogurt cups are firm and completely frozen.

Serve: Once frozen, remove the cups from the muffin tin. If you used a non-stick silicone mold, simply push them out. Allow them to sit at room temperature for a few minutes before serving to soften slightly. Garnish with fresh mint leaves if desired.

Enjoy: Serve them up as a refreshing dessert or snack!
