1/4 cup honey

1 cup fresh or frozen blueberries (thawed if frozen)

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1 cup granola (or finely chopped nuts for a crunchier texture)

1/4 cup unsweetened shredded coconut (optional for added texture)

Dark chocolate chips (for drizzling, optional)

Instructions
 

Prepare the Blueberries: If using fresh blueberries, rinse them under cold water and pat dry. If using frozen, ensure they are fully thawed and drained.

    Mix Yogurt Base: In a medium bowl, combine the plain Greek yogurt, honey, vanilla extract, and salt. Mix until well combined and smooth.

      Add Blueberries: Gently fold the blueberries into the yogurt mixture, being careful not to crush them, so they retain some shape.

        Form the Truffles: Line a baking sheet with parchment paper. Using a small cookie scoop or your hands, scoop out portions of the blueberry yogurt mixture and roll them into small balls, about 1 inch in diameter. Place them evenly on the lined baking sheet.

          Coat with Granola: Roll each ball in the granola (or chopped nuts) and then place them back on the baking sheet. If desired, sprinkle some shredded coconut on top as well for additional flavor.

            Freeze: Once all balls are formed and coated, place the baking sheet in the freezer. Freeze for at least 2-3 hours or until the truffles are solid.
