Frozen Mango Coconut Pops

Ingredients
  

2 ripe mangos, peeled and diced

1 cup coconut milk (full-fat for creaminess)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1 tablespoon fresh lime juice

1 teaspoon vanilla extract

1/2 cup shredded coconut (unsweetened or sweetened, based on preference)

Optional: Mint leaves for garnish

Instructions
 

Prepare the Mango Puree: In a blender, add the diced mangos, half of the coconut milk (1/2 cup), honey or maple syrup, lime juice, and vanilla extract. Blend until the mixture is smooth and creamy. Taste and adjust sweetness if needed.

    Combine Coconut Mixture: In a separate bowl, mix the remaining coconut milk with the shredded coconut. This will create a delightful texture in the pops.

      Layer the Pops: Grab your popsicle molds. Start by pouring a layer of the mango puree into each mold, filling them about halfway. Gently tap the molds on the counter to remove any air bubbles.

        Add the Coconut Layer: Spoon the coconut mixture on top of the mango layer, filling the molds almost to the top. Use a skewer or a spoon to slightly swirl the mango and coconut layers together for a beautiful marbled effect.

          Insert Sticks: If your popsicle molds don’t have built-in sticks, insert wooden popsicle sticks into the center of each mold.

            Freeze: Carefully place the molds in the freezer and allow them to freeze for at least 4-6 hours, or until completely solid.

              Release Pops: Once fully frozen, run warm water over the outside of the molds for a few seconds to help release the pops. Gently pull the pops out of the molds.

                Garnish and Serve: Optionally, garnish with fresh mint leaves for an extra burst of flavor and freshness. Serve immediately or store them in a sealed container in the freezer.
