Ingredients

2 cups plain Greek yogurt

1 cup brewed coffee, cooled

1/4 cup unsweetened cocoa powder

1/4 cup honey or maple syrup (adjust for sweetness preference)

1 teaspoon vanilla extract

1/2 teaspoon instant espresso powder (optional, for an extra coffee kick)

1/4 cup dark chocolate chips (optional, for a crunchy surprise)

Whipped cream (for topping, optional)

Cocoa nibs or chocolate shavings (for garnish, optional)

Instructions

Mix the Base: In a large mixing bowl, combine the Greek yogurt, cooled brewed coffee, cocoa powder, honey (or maple syrup), vanilla extract, and instant espresso powder (if using). Whisk together until smooth and well combined.

Sweeten to Taste: Taste the mixture and adjust the sweetness if necessary. If you prefer it sweeter, add more honey or maple syrup, mixing thoroughly.

Add Chocolate Chips: Gently fold in the dark chocolate chips, ensuring they are evenly distributed throughout the mixture for delightful pockets of chocolate in each cup.

Pour into Cups: Use a spoon or piping bag to fill silicone molds or paper muffin cups with the yogurt mixture. Leave about 1/4 inch at the top for the yogurt to expand as it freezes.

Freeze: Place the filled cups in the freezer for at least 4 hours, or until completely frozen.

Serve & Enjoy: To serve, remove the cups from the freezer and let them sit at room temperature for a few minutes to soften slightly. Top with whipped cream and garnish with cocoa nibs or chocolate shavings if desired.

Store: Any remaining yogurt cups can be wrapped in plastic wrap (if using silicone molds, pop them out and place in a container) and stored in the freezer for up to one month.
