Frozen Peach Yogurt Cups

2 cups fresh peaches, peeled and diced

1 cup Greek yogurt (plain or vanilla)

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

1/2 cup granola (your choice)

Fresh mint leaves, for garnish (optional)

Prepare the Peaches: Start by washing and peeling the peaches. Dice them into small cubes and place them in a bowl. If you prefer a smoother texture, you can blend them into a puree.

    Mix the Yogurt: In a separate bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until the mixture is well-combined and has a smooth consistency.

      Layer the Ingredients: Take a muffin tin or silicone cupcake molds. Spoon a layer of the yogurt mixture into the bottom of each cup, filling them about one-third full. Then, add a layer of diced peaches (or peach puree) on top of the yogurt.

        Add More Layers: Repeat the layers until the cups are filled to the top. Aim for about two or three layers, ending with a final layer of yogurt.

          Top with Granola: Once all the cups are filled, sprinkle a generous tablespoon of granola on top of each yogurt cup, adding a delightful crunch.
