Frozen Raspberry Almond Fudge Pops

Ingredients
  

1 cup fresh or frozen raspberries

1 cup unsweetened almond milk

1/4 cup almond butter

1/4 cup cocoa powder

1/4 cup maple syrup (or honey if not vegan)

1 teaspoon pure vanilla extract

1/4 teaspoon sea salt

2 tablespoons sliced almonds (for garnish)

Instructions
 

Prepare the Raspberry Mixture: If using fresh raspberries, rinse and drain them. If using frozen, you can use them directly. In a blender, add the raspberries and blend until smooth. If you prefer chunkier pops, you can blend them less. Set aside in a bowl.

    Make the Fudge Base: In the blender, add the almond milk, almond butter, cocoa powder, maple syrup, vanilla extract, and sea salt. Blend until everything is well combined and smooth. Taste the mixture and adjust the sweetness if desired.

      Combine the Mixtures: Gently fold in the raspberry mixture into the fudge base. Leave some streaks of raspberry for a beautiful marbled effect.

        Pour into Molds: Carefully pour the mixture into popsicle molds, filling each one about three-quarters full to allow for expansion when freezing.

          Insert Sticks: If your molds have a built-in stick holder, insert them as you fill. If they do not, freeze the pops for about 1-2 hours until slightly firm, then insert sticks into the center of each pop.

            Freeze: Cover the molds with a lid or plastic wrap and freeze for at least 4-6 hours or until completely solid.

              Unmold and Garnish: To remove the pops, run warm water over the outside of the molds for a few seconds. Gently pull to release the fudge pops. Before serving, sprinkle sliced almonds on top for an extra crunch.

                Enjoy: Serve these delicious frozen treats immediately, or store them in an airtight container in the freezer for later enjoyment!
