Ingredients

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

2 cups cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh or frozen raspberries (thawed if using frozen)

2 tablespoons lemon juice

1/4 teaspoon salt

1/2 cup dark chocolate (for drizzling, optional)

Instructions

Prepare the crust: In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated and have a sandy texture.

Press the crust: Line a mini muffin tin with paper liners. Use a tablespoon to scoop the graham cracker mixture into each cup and press down firmly to create an even layer at the bottom.

Make the filling: In a large bowl, beat together the softened cream cheese, powdered sugar, vanilla extract, lemon juice, and salt until smooth and creamy.

Add raspberries: Gently fold the raspberries into the cream cheese mixture, taking care not to crush them too much. The mixture will have a marbled appearance.

Fill the crusts: Spoon the cream cheese and raspberry mixture over the prepared crusts, filling each cup to the top.

Freeze: Place the muffin tin in the freezer for at least 3 hours or until the bites are solid.

Drizzle with chocolate (optional): If desired, melt the dark chocolate in a microwave or double boiler. Once melted, drizzle over the frozen cheesecake bites just before serving.

Serve: Allow the bites to sit at room temperature for a few minutes before removing them from the muffin tin. Enjoy your delightful frozen treats!
