Ingredients
  

1 cup fresh raspberries (or frozen, if not in season)

1/2 cup freshly squeezed lemon juice (about 3-4 lemons)

1/2 cup honey or agave syrup (adjust to taste)

1 cup coconut cream (chilled)

1/2 cup plain Greek yogurt (or dairy-free yogurt for a vegan option)

1 teaspoon vanilla extract

A pinch of salt

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Raspberry Puree: In a blender, combine the raspberries and 1/4 cup of the honey/agave. Blend until smooth. If desired, strain the mixture through a fine mesh sieve to remove seeds. Set aside.

    Make the Lemonade Base: In a separate bowl, mix the freshly squeezed lemon juice, remaining honey/agave, and a pinch of salt. Stir until the sweetener is fully dissolved.

      Combine Cream Mixture: In a mixing bowl, whisk together the chilled coconut cream, Greek yogurt, and vanilla extract until smooth and creamy.

        Layer the Ingredients: Prepare a silicone coin mold (about 2-inch diameter) and begin layering by adding a spoonful of the raspberry puree to each mold. Next, add a layer of the lemon mixture, followed by a layer of the cream mixture. Repeat the layers until the molds are filled, making sure to finish with a cream layer on top.

          Freeze: Carefully transfer the filled molds to the freezer. Allow them to freeze for at least 4 hours, or until solid.

            Serve: Once frozen, gently remove the cream coins from the molds. If they’re difficult to remove, run warm water on the outside of the molds for a few seconds. Garnish with fresh mint leaves if desired.
