Ingredients

2 cups fresh strawberries, hulled and sliced

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/4 cup Greek yogurt (plain or vanilla)

1 cup graham cracker crumbs

1 cup dark chocolate chips

Pinch of salt

Instructions

Prepare the Strawberries: In a bowl, mix the sliced strawberries with a tablespoon of powdered sugar. Allow them to sit for about 10-15 minutes so they release their juices and become sweetened.

Make the Cheesecake Mixture: In another bowl, combine the softened cream cheese, remaining powdered sugar, vanilla extract, Greek yogurt, and a pinch of salt. Use an electric mixer on medium speed to whip until the mixture is smooth and creamy.

Set Up for Clusters: Line a baking sheet with parchment paper to prevent sticking.

Form Clusters: Using a small cookie scoop or a tablespoon, scoop a dollop of the cheesecake mixture onto the prepared baking sheet. Top each dollop with a few pieces of the sweetened strawberries. Repeat until all the cheesecake mixture and strawberries are used, placing them about 1 inch apart.

Add Graham Cracker Crust: Sprinkle the graham cracker crumbs over each cluster generously. This will give your cheesecake bites that classic crust flavor!

Freeze the Clusters: Place the baking sheet in the freezer for about 30 minutes, or until the clusters are firm and set.

Melt the Chocolate: In a microwave-safe bowl, melt the dark chocolate chips in 30-second increments, stirring after each until smooth.

Coat the Clusters: Once the clusters are frozen, drizzles or dip them into the melted chocolate one at a time. Make sure to coat each cluster evenly before placing it back on the parchment paper.

Final Freeze: Return the chocolate-coated clusters to the freezer for another 30 minutes until the chocolate is hardened and set.

Serve and Enjoy: Once hardened, serve your Frozen Strawberry Cheesecake Clusters immediately or store them in an airtight container in the freezer for later enjoyment!
