2 cups fresh or frozen strawberries

1 cup coconut milk (or almond milk)

1/4 cup maple syrup (adjust based on sweetness preference)

1/2 cup chia seeds

1 teaspoon vanilla extract

A pinch of salt

In a blender, combine the strawberries, coconut milk, maple syrup, vanilla extract, and salt. Blend until smooth and well combined.

    Pour the mixture into a mixing bowl and stir in the chia seeds until evenly distributed.

      Let the mixture sit for about 10 minutes, stirring occasionally. This will allow the chia seeds to absorb some liquid and thicken the mixture.

        Once the mixture has thickened, gently stir it again to break up any clumps of chia seeds and ensure even distribution.

          Carefully spoon the mixture into ice pop molds, filling them about 3/4 full to allow for expansion.

            Insert sticks and tap the molds gently on the counter to remove any air bubbles.

              Freeze the pops for at least 4 hours or until solid.

                To remove the pops, run the molds under warm water for a few seconds to loosen, then gently pull out the pops. Enjoy your refreshing treat!
