Frozen Watermelon Kiwi Popsicles

4 cups seedless watermelon, diced

2 ripe kiwis, peeled and sliced

1 tablespoon honey or agave syrup (optional, adjust to taste)

1 tablespoon lime juice

Pinch of sea salt

1 cup coconut water (or regular water)

Popsicle molds and sticks

Instructions
 

Prepare the Watermelon Purée: In a blender, combine the diced watermelon, honey (if using), lime juice, and sea salt. Blend until smooth. If you prefer a little texture, pulse just a few times to keep some small watermelon chunks.

    Layer the Popsicles: Fill each popsicle mold about two-thirds full with the watermelon purée. Leave room for the kiwi layer.

      Add Kiwi: Place the sliced kiwi on top of the watermelon layer in each mold. You can arrange them in a decorative pattern if desired.

        Add Coconut Water: Pour a small amount of coconut water (or regular water) on top of the kiwi slices to fill the molds to the top. This will create a refreshing layer that complements the flavors.

          Insert Sticks: Gently insert the popsicle sticks into the molds, making sure they’re centered.

            Freeze: Cover the molds with their lids or some plastic wrap, and freeze for at least 4-6 hours, or until completely solid.

              Unmold and Enjoy: To release the popsicles, run warm water over the outside of the molds for a few seconds until they loosen. Enjoy your refreshing frozen treats on a hot day!
