1 cup plain yogurt (Greek or regular)

1/2 cup almond butter (creamy or crunchy)

1/2 cup chia seeds

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1/2 teaspoon almond extract

A pinch of sea salt

1/2 cup sliced almonds (for topping)

Fresh berries or chocolate chips (optional, for garnish)

Instructions
 

Combine Base Ingredients: In a large mixing bowl, whisk together the yogurt, almond butter, honey (or maple syrup), vanilla extract, almond extract, and sea salt until smooth and well combined.

    Add Chia Seeds: Stir in the chia seeds, mixing them thoroughly into the yogurt mixture. You may find a spatula helps to ensure everything is evenly mixed.

      Transfer to Molds: Spoon the mixture into silicone molds or small round ice cube trays, filling each compartment halfway. If you don’t have molds, you can also use a parchment-lined baking sheet, making dollops of the mixture.

        Top with Almonds: Sprinkle a few sliced almonds on top of each coin, pressing them gently into the mixture.

          Freeze: Place the molds in the freezer for at least 4 hours, or until the yogurt coins are completely solid.

            Serve: Once frozen, carefully pop out the yogurt coins from the molds. You can garnish them with fresh berries or a few chocolate chips if desired.

              Store: Place the coins in an airtight container, separated by parchment paper, and store in the freezer. Enjoy them as a refreshing snack or a healthy dessert!
