1/4 cup brown sugar (or coconut sugar)

1/4 cup unsalted butter (melted)

1 teaspoon vanilla extract

Prepare the Apples: In a medium bowl, toss the diced apples with lemon juice, ground cinnamon, and 1 tablespoon of maple syrup. Set aside to marinate for about 10-15 minutes.

    Make the Crust Mixture: In a separate large bowl, combine the rolled oats, almond flour, brown sugar, and salt. Pour in the melted butter and the remaining maple syrup while mixing until well combined. The mixture should be crumbly yet sticky.

      Assemble the Coins: Preheat your oven to 350°F (175°C). Take a baking sheet lined with parchment paper, and use a round cookie cutter (about 3 inches in diameter) to cut out circles in the crust mixture, placing them on the sheet.
