Ingredients

2 cups pretzel sticks, crushed

1 cup granola

1/4 cup unsweetened cocoa powder

1/2 cup honey or maple syrup

2 tablespoons coconut oil, melted

2 cups plain Greek yogurt (or dairy-free yogurt)

1/4 cup peanut butter (or almond butter)

1/4 cup dark chocolate chips

Pinch of sea salt

Instructions

Prepare the Base: In a large mixing bowl, combine the crushed pretzel sticks, granola, cocoa powder, honey (or maple syrup), and melted coconut oil. Mix well until everything is evenly coated and the mixture resembles wet sand.

Form the Layer: Press the pretzel mixture firmly into the bottom of an 8x8 inch (or 9x9 inch) baking dish lined with parchment paper, ensuring it is even. Use the back of a measuring cup or your hands to pack it tightly. Set aside.

Make the Yogurt Mixture: In another bowl, mix the Greek yogurt and peanut butter until smooth and well combined. Taste and add additional honey if sweetness is desired.

Assemble Layers: Pour the yogurt mixture over the pretzel crust, spreading it evenly with a spatula.

Add Chocolate Chips: Sprinkle dark chocolate chips evenly over the yogurt layer, pressing them gently into the yogurt with your fingers.

Freeze: Cover the dish with plastic wrap or aluminum foil and place it in the freezer. Freeze for at least 4 hours, or until fully set.

Slice and Serve: Once frozen, remove from the freezer and let it sit for 5 minutes at room temperature. Lift out the bars using the parchment paper and cut them into squares or rectangles.

Enjoy: Serve these deliciously chilled Chocolate Pretzel Bars as a sweet treat or after-school snack!
