Frozen Yogurt Honey Walnut Rounds

2 cups plain Greek yogurt

1/4 cup honey

1 cup walnuts, chopped

1 teaspoon vanilla extract

1/4 teaspoon cinnamon

Pinch of salt

1/2 cup dark chocolate chips (optional, for drizzling)

Fresh mint leaves for garnish (optional)

Prepare the Walnut Mixture: In a small skillet, toast the chopped walnuts over medium heat for about 5 minutes, stirring frequently until they are golden and fragrant. Remove from heat and set aside to cool.

    Mix the Yogurt Base: In a large mixing bowl, combine the Greek yogurt, honey, vanilla extract, cinnamon, and a pinch of salt. Stir until well blended and smooth.

      Incorporate Walnuts: Gently fold the toasted walnuts into the yogurt mixture, reserving about 2 tablespoons for topping.

        Shape the Rounds: Line a baking sheet with parchment paper. Using a tablespoon or a small ice cream scoop, drop spoonfuls of the yogurt mixture onto the prepared baking sheet, forming round shapes. Make sure they are spaced apart, as they will expand slightly.

          Freeze: Place the baking sheet in the freezer for at least 2-3 hours, or until the rounds are completely frozen.

            Drizzle (Optional): If using, melt the dark chocolate chips in the microwave or using a double boiler. Drizzle the melted chocolate over the frozen yogurt rounds just before serving.

              Serve: Remove the rounds from the freezer and let them sit at room temperature for about 5 minutes before serving. Garnish with the reserved walnuts and fresh mint leaves if desired.
