Ingredients

2 ripe mangoes, peeled and diced

1 cup coconut yogurt (or Greek yogurt for a tangy flavor)

1/4 cup honey or maple syrup (adjust to taste)

1 tsp vanilla extract

1 cup unsweetened shredded coconut

1 tbsp lime juice

Pinch of salt

Instructions

Prepare the Mango Puree: In a blender, combine the diced mangoes, lime juice, honey (or maple syrup), vanilla extract, and a pinch of salt. Blend until smooth and creamy. Set aside.

Mix the Yogurt: In a large bowl, combine the coconut yogurt with half of the mango puree. Stir until well incorporated.

Layer the Slices: Line a 9x5-inch loaf pan with parchment paper, allowing a little excess on the sides to facilitate easy removal. Start by adding a layer of the yogurt mixture to the bottom of the pan, smoothing it out flat.

Add Mango Puree: Pour half of the remaining mango puree over the yogurt layer, spreading it evenly. Then sprinkle a layer of shredded coconut on top.

Repeat Layers: Add another layer of the yogurt mixture, followed by the rest of the mango puree, and finish with the remaining shredded coconut for a nice topping. Use a toothpick or skewer to create marble patterns if desired.

Freeze: Cover the loaf pan with plastic wrap and place it in the freezer for at least 4-6 hours, or until it’s fully set and firm.

Slice and Serve: Once frozen, lift the parfait out of the loaf pan using the overhanging parchment paper. Place it on a cutting board and slice into 'ice cream bar' sized pieces. Serve immediately or keep slices in an airtight container in the freezer for later.

Garnish Optional: For an extra touch, drizzle with additional honey or top with fresh mango slices when serving.
