Ingredients

2 cups plain Greek yogurt

1/2 cup honey or maple syrup

2 teaspoons vanilla extract

1 tablespoon matcha green tea powder

2 tablespoons unsweetened cocoa powder

1/4 cup strong brewed espresso or coffee, cooled

1/4 cup dark chocolate chips (for topping)

1/4 cup crushed nuts (almonds or walnuts, optional)

Pinch of sea salt

Instructions

Prepare the Base: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Mix until smooth and well combined.

Create the Matcha Mixture: In a separate bowl, take half of the yogurt mixture (about 1 cup). Add the matcha powder and a pinch of sea salt, and stir until fully combined.

Create the Mocha Mixture: In the same bowl used for the remaining yogurt mixture, mix in the cocoa powder and cooled espresso or coffee. Stir until smooth.

Layer the Mixtures: In a parchment-lined baking dish (8x8 inches works great), first spread the matcha yogurt layer evenly across the bottom. Follow with the mocha yogurt layer on top.

Swirl (Optional): If you want a marbled effect, use a knife to gently swirl the matcha and mocha layers together.

Add Toppings: Sprinkle dark chocolate chips and crushed nuts on top for added texture and flavor.

Freeze: Cover the dish with plastic wrap or a lid and freeze for at least 4 hours, or until fully set.

Slice and Serve: Once frozen solid, remove from the freezer and let it sit at room temperature for about 5 minutes to soften slightly. Cut into bars and serve immediately.

Store: Keep any leftovers in an airtight container in the freezer for up to a week.
