4 large flour tortillas

1 cup cream cheese, softened

1/4 cup powdered sugar

1 tsp vanilla extract

1 cup mixed fresh fruits (strawberries, blueberries, kiwi, bananas) diced

1/2 cup granola

1/4 cup chocolate syrup (for drizzling)

Fresh mint leaves (for garnish)

Cooking spray or 1 tablespoon butter (for grilling)

Instructions
 

Prepare the Cream Cheese Mixture: In a medium mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.

    Assemble the Quesadillas: Place one tortilla on a flat surface. Spread approximately 1/4 of the cream cheese mixture evenly over the tortilla, leaving a small border around the edges. Sprinkle 1/4 of the diced fruits and 2 tablespoons of granola on one half of the tortilla.

      Fold and Repeat: Fold the tortilla in half over the filling. Repeat steps 2 and 3 for the remaining tortillas.

        Cook the Quesadillas: Heat a skillet over medium heat, and lightly coat with cooking spray or melted butter. Add the first quesadilla and cook for 2-3 minutes on one side until golden brown and crispy. Carefully flip and cook the other side until golden and the quesadilla is heated through. Remove and keep warm. Repeat with the remaining quesadillas.

          Slice and Serve: Cut each quesadilla into wedges. Drizzle with chocolate syrup and garnish with fresh mint leaves. Serve warm for a delightful fruity treat!
