1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon smoked paprika

½ teaspoon onion powder

½ teaspoon dried thyme

Salt and pepper, to taste

2 cups cooked jasmine or basmati rice

2 cups steamed broccoli florets (or your favorite vegetable)

¼ cup fresh parsley, chopped (for garnish)

1 tablespoon soy sauce (optional)

Lemon wedges (for serving)

Prepare the Chicken: Pat the chicken pieces dry with paper towels. Season with salt, pepper, smoked paprika, onion powder, and thyme. Toss to coat evenly.
