Garlic Butter Shrimp & Zucchini Noodles

Ingredients
  

1 lb (450g) large shrimp, peeled and deveined

3 medium zucchinis, spiralized into noodles

4 cloves garlic, minced

1/4 cup unsalted butter

2 tablespoons olive oil

1 teaspoon red pepper flakes (adjust to taste)

Zest and juice of 1 lemon

Salt and pepper, to taste

1/4 cup freshly grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Shrimp: In a medium bowl, season the shrimp with salt, pepper, and half of the lemon juice. Set aside to marinate for about 10 minutes.

    Cook the Shrimp: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, add the shrimp and cook for 2-3 minutes on each side, until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Sauté Garlic: In the same skillet, add the remaining tablespoon of olive oil and the butter. Once the butter has melted, add the minced garlic and red pepper flakes. Sauté for about 1 minute, or until fragrant but not browned.

        Add Zucchini Noodles: Add the spiralized zucchini noodles to the skillet and toss to coat in the garlic butter. Cook for about 2-3 minutes, just until the noodles start to soften.

          Combine Everything: Return the cooked shrimp to the skillet, add the lemon zest and remaining lemon juice, and toss everything together to evenly coat.

            Finish: Remove from heat and sprinkle with freshly grated Parmesan cheese. Adjust seasoning with additional salt and pepper if necessary.

              Garnish and Serve: Plate the garlic butter shrimp and zucchini noodles in serving dishes, garnishing with chopped fresh parsley.
