Ingredients

2 cups cooked jasmine rice

2 boneless, skinless chicken breasts

4 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cup fresh spinach, chopped

¼ cup fresh parsley, chopped

1 lemon, juiced

Optional: Crumbled feta cheese for topping

Instructions

Marinate the Chicken:

    - In a bowl, combine minced garlic, olive oil, dried oregano, thyme, paprika, salt, and pepper. Mix well.

      - Add the chicken breasts to the marinade and ensure they are fully coated. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator for a stronger flavor).

        Cook the Chicken:

          - Heat a skillet over medium-high heat. Add the marinated chicken breasts and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown. Remove from the skillet and let it rest for a few minutes before slicing.

            Sauté the Vegetables:

              - In the same skillet, add the halved cherry tomatoes and chopped spinach. Sauté for about 2-3 minutes or until the spinach is wilted and the tomatoes are slightly softened. Season with a pinch of salt and pepper.

                Assemble the Rice Bowls:

                  - To serve, divide the cooked jasmine rice among bowls. Top each bowl with sliced chicken, sautéed tomatoes, and spinach.

                    - Drizzle with fresh lemon juice and garnish with chopped parsley. Add crumbled feta cheese on top if desired.

                      Enjoy:

                        - Mix all the ingredients together in the bowl before eating for a burst of flavors. Serve warm and enjoy your delicious Garlic Herb Chicken Rice Bowls!
