Ingredients

4 boneless, skinless chicken breasts

4 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup olive oil

2 ripe peaches, halved and pitted

2 tablespoons honey

1 tablespoon balsamic vinegar

Fresh arugula or spinach for garnish (optional)

Instructions

Marinate the Chicken: In a large bowl, combine minced garlic, rosemary, thyme, paprika, salt, pepper, and olive oil. Add the chicken breasts and coat them well with the marinade. Cover and let them marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

Prepare to Roast Peaches: Preheat your oven to 400°F (200°C). While the chicken marinates, prepare the peaches. Lightly brush the cut sides with a little olive oil and arrange them, cut side up, on a baking sheet. Drizzle with honey and balsamic vinegar for an added sweetness and tang.

Roasting Peaches: Once the oven is ready, place the peaches in the oven and roast for 15-20 minutes, or until they are soft and caramelized. Watch them closely to ensure they don't burn.

Cook the Chicken: While the peaches are roasting, heat a large skillet over medium heat. Once hot, add the marinated chicken breasts (discard any leftover marinade). Cook for about 6-7 minutes on each side or until they are golden brown and the internal temperature reaches 165°F (75°C).

Serve: Once the chicken is cooked and the peaches are caramelized, plate the chicken breasts and top them with the warm roasted peaches. If desired, add a handful of fresh arugula or spinach around the plate for a refreshing crunch.

Garnish & Enjoy: Drizzle any remaining juices from the peach pan over the chicken for extra flavor. Serve immediately and enjoy your delicious Garlic Herb Chicken with Roasted Peaches!
