2 large sweet potatoes, spiralized into noodles

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon fresh rosemary, finely chopped

1 teaspoon fresh thyme, finely chopped

1 teaspoon fresh parsley, finely chopped

1/2 teaspoon red pepper flakes (optional, for heat)

Salt and pepper, to taste

1 tablespoon lemon juice

Grated Parmesan cheese (for serving, optional)

Fresh herbs for garnish (optional)

Instructions
 

Prepare the Sweet Potatoes: Spiralize the sweet potatoes using a spiralizer. Alternatively, you can julienne them into thin strips. Set aside.

    Heat the Oil: In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant but not browned.

      Sauté Noodles: Add the sweet potato noodles to the skillet. Toss well to coat with the garlic oil and cook for about 5-7 minutes, stirring occasionally, until they are tender but still have a slight crunch.

        Season: Stir in the chopped rosemary, thyme, parsley, red pepper flakes (if using), and lemon juice. Season with salt and pepper to taste. Continue to cook for another 2 minutes to meld the flavors.

          Serve: Remove from heat and transfer the noodles to a serving platter. Sprinkle with grated Parmesan cheese if desired, and garnish with extra fresh herbs.
