Ingredients

1 pound of large white or cremini mushrooms, cleaned and stems removed

4 tablespoons olive oil

4 tablespoons unsalted butter, melted

4 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried oregano

1/2 teaspoon crushed red pepper flakes (optional for heat)

1/2 cup grated Parmesan cheese

Fresh parsley, finely chopped (for garnish)

Lemon wedges (for serving)

Instructions

Prepare the Marinade: In a mixing bowl, whisk together the olive oil, melted butter, minced garlic, salt, black pepper, oregano, and red pepper flakes (if using) until well combined.

Marinate the Mushrooms: Place the cleaned mushrooms in a large resealable plastic bag or shallow dish. Pour the marinade over the mushrooms, ensuring they are well coated. Seal the bag or cover the dish and let them marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

Prepare the Grill: Preheat your grill to medium-high heat. If using a grill pan, place it on the stove over medium-high heat.

Grill the Mushrooms: Remove the mushrooms from the marinade, letting any excess drip off. Place them on the grill, gill-side down. Grill for about 4-5 minutes on each side, or until they are tender and have nice grill marks.

Add the Cheese: Once the mushrooms are nearly done, sprinkle the grated Parmesan cheese on top of each mushroom and close the grill lid. Allow the cheese to melt for about 2-3 minutes.

Serve: Remove the mushrooms from the grill and transfer them to a serving platter. Garnish with fresh parsley and serve with lemon wedges on the side for an extra zing.
