1 lb large shrimp, peeled and deveined

3 medium zucchinis, spiralized into noodles

4 cloves garlic, minced

1/4 cup olive oil

1/2 teaspoon red pepper flakes (adjust for spice preference)

1/4 cup fresh parsley, chopped

1 tablespoon lemon juice

Salt and pepper, to taste

1/4 cup grated Parmesan cheese (optional)

Prep the Zucchini: Start by spiralizing the zucchinis. Place the noodles in a colander, sprinkle with a bit of salt, and allow them to drain for about 10-15 minutes. This will help reduce excess moisture, preventing sogginess in your dish.

    Cook the Shrimp: In a large skillet, heat olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1-2 minutes until fragrant, but be careful not to burn the garlic.

      Add Shrimp: Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes on one side until they turn pink, then flip and cook for an additional 1-2 minutes until fully cooked. Season with salt and pepper to taste.
