Green Chili Chicken Stuffed Wraps

2 cups cooked chicken, shredded

1 cup green chili sauce

1 cup black beans, drained and rinsed

1 cup corn, frozen or fresh

1 cup shredded cheese (cheddar or pepper jack)

½ cup diced red onion

½ cup chopped fresh cilantro

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

4 large flour tortillas or wraps

½ cup sour cream (for serving)

Lime wedges (for serving)

Instructions
 

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, green chili sauce, black beans, corn, half of the cheese, diced red onion, cilantro, garlic powder, cumin, salt, and pepper. Mix well to uniformly coat the chicken and veggies in the sauce.

    Assemble the Wraps: Lay a flour tortilla flat on a clean surface. Spoon approximately 1 cup of the chicken mixture onto the center of the tortilla. Be careful not to overfill, as this can make wrapping difficult.

      Wrap it Up: Fold the sides of the tortilla over the filling, then roll from the bottom up to enclose the filling tightly. Repeat with the remaining tortillas and filling.

        Heat the Wraps: In a large skillet over medium heat, drizzle a little oil. Once hot, place the wraps seam-side down in the skillet. Cook for about 2-3 minutes on each side until they are golden brown and crispy. You can also use a grill or grill pan for a nice char.
