1/4 cup milk

1/2 cup diced green chilies (mild or hot, based on preference)

1/4 cup diced onion

1/2 cup diced bell pepper (any color)

4 large flour tortillas

2 tbsp olive oil or butter

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Hot sauce (optional, for serving)

Prepare the Filling: In a medium bowl, whisk together the eggs and milk until fully combined. Season with a pinch of salt and pepper.

    Cook the Veggies: In a skillet over medium heat, add the olive oil or butter. Once hot, add the diced onions and bell peppers. Sauté for 3-4 minutes until softened and lightly browned.

      Add Green Chilies: Stir in the diced green chilies and cook for an additional minute to blend the flavors.

        Scramble the Eggs: Pour the egg mixture into the skillet with the vegetables. Stir gently with a spatula, allowing the eggs to cook evenly. Add the shredded cheddar cheese once the eggs begin to set, folding it in until melted and creamy. Remove from heat.
