Grilled Chicken Avocado Flatbread

2 large flatbreads (whole wheat or traditional)

2 boneless, skinless chicken breasts

2 ripe avocados

1 cup cherry tomatoes, halved

1/4 cup red onion, thinly sliced

1/2 cup shredded mozzarella cheese

1/4 cup fresh cilantro, chopped

2 tbsp olive oil

1 tbsp lime juice

Salt and pepper, to taste

1 tsp garlic powder

1 tsp smoked paprika

1/2 tsp cumin

Optional: sliced jalapeños for heat

Marinate the Chicken: In a small bowl, mix olive oil, lime juice, garlic powder, smoked paprika, cumin, salt, and pepper. Coat the chicken breasts with the marinade and let them sit for at least 30 minutes, or refrigerate for up to 2 hours for deeper flavor.

    Grill the Chicken: Preheat the grill to medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for 5 minutes before slicing.

      Prepare the Flatbread: While the chicken is grilling, prepare your flatbreads. If you enjoy a bit of crispiness, you can lightly toast them on the grill for 2-3 minutes, flipping halfway through.

        Mash the Avocados: In a bowl, mash the ripe avocados with a pinch of salt and a squeeze of lime juice. This will add flavor and keep the avocado from browning too quickly.

          Assemble the Flatbreads: Spread a generous layer of mashed avocado on each flatbread. Top with sliced grilled chicken, halved cherry tomatoes, red onion, and shredded mozzarella cheese.
