Grilled Chicken Caesar Lettuce Wraps

For the Grilled Chicken:

1 lb boneless, skinless chicken breasts

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon paprika

Salt and pepper to taste

Juice of 1 lemon

For the Caesar Dressing:

3 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 teaspoon Worcestershire sauce

1 clove garlic, minced

2 tablespoons grated Parmesan cheese

Salt and pepper to taste

For Assembly:

1 head of Romaine lettuce (or butter lettuce)

1/2 cup cherry tomatoes, halved

1/4 cup croutons (optional)

Extra Parmesan cheese for garnish

Instructions
 

Marinate the Chicken:

    - In a bowl, whisk together olive oil, minced garlic, paprika, salt, pepper, and lemon juice.

      - Add the chicken breasts, ensuring they are well coated. Let marinate for at least 30 minutes (or up to 2 hours) in the refrigerator.

        Prepare the Dressing:

          - In a separate bowl, combine mayonnaise, Dijon mustard, lemon juice, Worcestershire sauce, minced garlic, Parmesan cheese, and a pinch of salt and pepper.

            - Mix until smooth and well combined. Adjust seasoning to taste and set aside.

              Grill the Chicken:

                - Preheat your grill or grill pan over medium-high heat.

                  - Remove chicken from the marinade and grill for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).

                    - Once cooked, remove from the grill and allow it to rest for a few minutes before slicing.

                      Assemble the Wraps:

                        - Carefully separate the leaves of the Romaine lettuce to create “wraps.”

                          - Place slices of grilled chicken in the center of each lettuce leaf, followed by a drizzle of the Caesar dressing.

                            - Top with halved cherry tomatoes and croutons if desired. Sprinkle extra Parmesan cheese on top.

                              Serve:
