4 ears of fresh corn, husked

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1/2 red onion, diced

1 cup crumbled feta cheese

1/4 cup fresh cilantro, chopped

3 tablespoons olive oil

2 tablespoons lime juice (about 1 lime)

1 teaspoon honey

Salt and pepper to taste

Optional: 1 jalapeño, diced (for heat)

Preheat the Grill: Preheat your grill to medium-high heat.

    Grill the Corn: Place the husked corn on the grill and cook for about 10-12 minutes, turning occasionally, until the kernels are lightly charred and tender. Once cooked, remove from the grill and allow to cool slightly.

      Prepare the Dressing: In a small bowl, whisk together the olive oil, lime juice, honey, salt, and pepper. Adjust seasoning based on your taste.

        Cut the Corn: Once the corn is cool enough to handle, cut the kernels off the cob using a sharp knife. Place the corn in a large mixing bowl.

          Combine Ingredients: Add the diced avocados, cherry tomatoes, red onion, feta cheese, and cilantro to the bowl with the grilled corn. If using, add the diced jalapeño for some spice.

            Dress the Salad: Pour the dressing over the salad and gently toss to combine, being careful not to mash the avocados.
