Grilled Corn & Avocado Salad

Ingredients
  

4 ears of sweet corn, husked

2 ripe avocados, diced

1 cup cherry tomatoes, halved

½ red onion, finely chopped

1 jalapeño, seeded and diced (optional)

¼ cup fresh cilantro, chopped

Juice of 2 limes

3 tablespoons olive oil

Salt and pepper to taste

½ teaspoon smoked paprika (optional)

Feta cheese or cotija cheese for garnish (optional)

Instructions
 

Preheat the grill to medium-high heat.

    Place the husked corn directly on the grill grates. Grill for about 10-15 minutes, turning occasionally until the corn is tender and has a nice char. Remove from the grill and allow to cool.

      Once cooled, cut the kernels off the cob and transfer them to a large mixing bowl.

        In the same bowl, add the diced avocado, cherry tomatoes, red onion, jalapeño (if using), and chopped cilantro.

          In a small bowl, whisk together the lime juice, olive oil, smoked paprika, salt, and pepper. Pour over the salad mixture.

            Gently toss everything together until well combined and the avocado is evenly coated with the dressing.

              Taste and adjust seasoning if necessary. You can add more lime juice, salt, or pepper according to your preference.

                Serve the salad in bowls or on a platter, garnished with crumbled feta or cotija cheese, if desired. Enjoy!
