Grilled Eggplant & Feta Wraps

2 medium eggplants, sliced into 1/4-inch thick rounds

3 tablespoons olive oil, divided

Salt and pepper, to taste

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 cup crumbled feta cheese

1/4 cup fresh parsley, chopped

1/4 cup sun-dried tomatoes, chopped

4 large whole wheat or spinach wraps

1/2 cup hummus

Fresh arugula or spinach, for garnish (optional)

Instructions
 

Prep the Eggplants: Place the slices of eggplant in a colander and sprinkle with salt. Let them sit for about 20 minutes to draw out excess moisture and bitterness. Rinse and pat dry with paper towels.

    Season the Eggplant: In a large bowl, combine 2 tablespoons of olive oil, smoked paprika, garlic powder, salt, and pepper. Toss the eggplant slices in the mixture until evenly coated.

      Grill the Eggplant: Preheat your grill or grill pan over medium-high heat. Grill the eggplant slices for about 3-4 minutes on each side, until they have nice grill marks and are tender. Remove from heat and set aside.

        Make the Wraps: Lay a wrap flat on a clean surface. Spread about 2 tablespoons of hummus evenly across the wrap. Layer the grilled eggplant slices on top.

          Add the Fillings: Sprinkle crumbled feta cheese, chopped sun-dried tomatoes, and fresh parsley over the eggplant. Add a handful of arugula or spinach if desired.

            Wrap It Up: Starting from one end, roll the wrap tightly, tucking in the sides as you go to secure the fillings. Repeat with the remaining wraps.
