Grilled Halloumi & Watermelon Salad

Ingredients
  

250g halloumi cheese, sliced into 1 cm thick pieces

4 cups watermelon, cubed and seeds removed

2 cups arugula (rocket)

1/2 cup fresh mint leaves, roughly chopped

1/4 cup extra virgin olive oil

2 tablespoons balsamic vinegar

1 tablespoon honey

Salt and pepper, to taste

Zest of 1 lime

Juice of 1 lime

Optional: toasted pumpkin seeds for garnish

Instructions
 

Preheat the Grill: Start by preheating your grill or grill pan over medium-high heat.

    Prepare the Salad Base: In a large bowl, combine the cubed watermelon, arugula, and chopped mint. Gently toss them together to mix well.

      Marinate the Watermelon: Drizzle half of the olive oil and the lime juice over the watermelon mixture. Season with a pinch of salt and pepper. Allow it to marinate while you prepare the halloumi.

        Grill the Halloumi: Brush the halloumi slices with the remaining olive oil, and lightly season them with salt and pepper. Place the cheese on the grill and cook for about 2-3 minutes on each side until golden brown and grill marks appear.

          Prepare the Dressing: In a small bowl, whisk together the balsamic vinegar, honey, lime zest, and a pinch of salt and pepper. This will be your dressing.

            Assemble the Salad: Once the halloumi is grilled, remove it from the heat and place it on top of the watermelon mixture. Drizzle the dressing over the salad.

              Garnish and Serve: If desired, sprinkle toasted pumpkin seeds over the salad for added crunch. Serve immediately while the halloumi is still warm.
