Ingredients

4 ripe peaches, halved and pitted

1 pint cherry tomatoes, halved

8 ounces fresh mozzarella balls (bocconcini)

6 fresh basil leaves, torn

2 tablespoons balsamic glaze

2 tablespoons olive oil

Salt and freshly cracked black pepper, to taste

8 wooden or metal skewers

Instructions

Prep the Grill: Preheat your grill to medium-high heat, about 400°F (200°C). If using wooden skewers, soak them in water for 30 minutes to prevent burning.

Assemble the Skewers: Take a skewer and thread a peach half onto it, cut side facing up. Follow with a basil leaf, a cherry tomato half, and a mozzarella ball. Repeat the pattern until the skewer is filled, leaving a small space at the ends for easy handling. You should aim for about 2 to 3 peach halves, 2 to 3 tomato halves, and 1 mozzarella ball per skewer.

Drizzle with Olive Oil: Brush the assembled skewers lightly with olive oil, ensuring all ingredients are coated. This will help with grilling and add flavor.

Season: Sprinkle the skewers with salt and freshly cracked black pepper to taste.

Grill the Skewers: Place the skewers on the preheated grill. Grill for about 3-4 minutes on each side until the peaches are caramelized and the mozzarella is slightly melted. Avoid overcooking, as you want the peaches to maintain some structural integrity.

Add Balsamic Glaze: Remove the skewers from the grill and drizzle the balsamic glaze over the top while they are still warm. You can also add an extra sprinkle of fresh basil if desired.

Serve: Arrange the skewers on a serving platter and enjoy them warm as an appetizer or a side dish.
