Grilled Salmon with Pineapple Salsa

For the Grilled Salmon:

4 salmon fillets (6 ounces each)

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon honey

1 tablespoon Dijon mustard

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

Salt and pepper, to taste

Juice of 1 lime

For the Pineapple Salsa:

1 cup fresh pineapple, diced

1/4 red onion, finely chopped

1 jalapeño, minced (seeds removed for less heat)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

Instructions
 

Marinate the Salmon:

    - In a bowl, whisk together the olive oil, soy sauce, honey, Dijon mustard, minced garlic, grated ginger, lime juice, salt, and pepper.

      - Place the salmon fillets in a resealable plastic bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 30 minutes (up to 2 hours for more flavor).

        Prepare the Pineapple Salsa:

          - In a medium bowl, combine the diced pineapple, red onion, jalapeño, cilantro, lime juice, and salt. Mix well and taste, adjusting seasoning as necessary. Set aside to allow the flavors to meld.

            Preheat the Grill:
