Grilled Steak Tacos with Corn Salsa

For the Steak:

1.5 lbs flank steak or sirloin

2 tbsp olive oil

2 cloves garlic, minced

1 tbsp lime juice

1 tsp smoked paprika

1 tsp ground cumin

1 tsp chili powder

Salt and black pepper to taste

For the Corn Salsa:

2 cups fresh corn kernels (from about 3 ears of corn)

1 red bell pepper, diced

1/2 red onion, diced

1/3 cup fresh cilantro, chopped

1 jalapeño, seeds removed and finely chopped (optional for extra heat)

Juice of 1 lime

Salt and black pepper to taste

For the Tacos:

8 small corn tortillas

Optional toppings: diced avocado, crumbled queso fresco, lime wedges, and extra cilantro

Instructions
 

Marinate the Steak: In a small bowl, combine olive oil, minced garlic, lime juice, smoked paprika, cumin, chili powder, salt, and pepper. Rub this marinade all over the steak and let it marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.

    Prepare the Corn Salsa: While the steak is marinating, prepare the corn salsa. In a mixing bowl, toss together the corn kernels, diced red bell pepper, red onion, chopped cilantro, and jalapeño. Drizzle with lime juice and season with salt and pepper to taste. Mix well and set aside to let the flavors meld.

      Grill the Steak: Preheat your grill to high heat. Once hot, place the marinated steak on the grill and cook for about 4–6 minutes per side for medium-rare, or until desired doneness. Once done, remove the steak from the grill and let it rest for 5 minutes before slicing.

        Prepare the Tortillas: While the steak rests, grill the corn tortillas for about 30 seconds on each side until they are warm and slightly charred. Alternatively, you can heat them in a skillet over medium heat.

          Assemble the Tacos: Thinly slice the rested steak against the grain. Place a few slices of steak into each warm tortilla and top generously with the vibrant corn salsa.

            Add Optional Toppings: If desired, add diced avocado, crumbled queso fresco, and a sprinkle of extra cilantro on top. Serve with lime wedges on the side.
