Grilled Veggie & Hummus Wraps

4 large whole wheat tortillas

1 cup hummus (store-bought or homemade)

1 medium zucchini, sliced into thin rounds

1 red bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

1 medium red onion, sliced into rings

1 cup baby spinach or arugula

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Optional: Feta cheese crumbles or nutritional yeast for a vegan option

Prepare the Grill: Preheat your grill or grill pan over medium-high heat. If using a grill pan on the stovetop, lightly grease with olive oil.

    Season the Vegetables: In a large mixing bowl, combine the sliced zucchini, red and yellow bell peppers, and red onion. Drizzle with olive oil, sprinkle with garlic powder, smoked paprika, salt, and pepper. Toss until all the veggies are well-coated.

      Grill the Veggies: Place the seasoned vegetables on the grill. Cook for about 3-4 minutes per side or until they are tender with grill marks. Remove from the grill and let them cool slightly.

        Assemble the Wraps: Lay a tortilla flat on a clean surface. Spread a generous ΒΌ cup of hummus over the entire tortilla, leaving a little space around the edges.

          Add the Filling: Layer the grilled veggies on top of the hummus, followed by a handful of spinach or arugula. If desired, sprinkle with feta cheese or nutritional yeast for added flavor.

            Wrap It Up: Starting from one edge, tightly roll the tortilla over the filling. Fold in the sides as you roll to keep the filling secure. Slice the wrap in half diagonally.
