Ingredients

4 medium zucchini, sliced into 1/4-inch thick rounds

4 tablespoons unsalted butter

4 cloves garlic, minced

2 tablespoons fresh parsley, finely chopped

1 teaspoon lemon zest

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for heat)

Olive oil, for drizzling

Instructions

Prepare the Zucchini: Preheat your grill to medium-high heat. While the grill is heating, place the sliced zucchini in a large mixing bowl. Drizzle with olive oil and sprinkle with salt, black pepper, and red pepper flakes (if using). Make sure the zucchini is well-coated.

Make the Garlic Butter: In a small saucepan, melt the unsalted butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant and slightly golden. Remove from heat and stir in the chopped parsley and lemon zest. Set aside.

Grill the Zucchini: Place the seasoned zucchini slices on the grill in a single layer. Grill for about 3-4 minutes per side or until they have nice grill marks and are tender but still slightly crisp. Avoid overcooking to retain their vibrant color and texture.

Add the Garlic Butter: Once the zucchini is grilled to your liking, remove it from the grill and drizzle the warm garlic butter over the top. Use a basting brush or spoon to ensure each piece is well-coated.

Serve and Enjoy: Arrange the grilled zucchini on a serving platter. Garnish with additional parsley if desired. Serve immediately as a delightful side dish or a healthy snack.
