Ingredients

1 cup natural peanut butter (creamy or crunchy)

1/4 cup maple syrup or honey

1/2 cup rolled oats

1/4 cup unsweetened cocoa powder

1/4 teaspoon salt

1/2 teaspoon vanilla extract

1/4 cup dark chocolate chips (dairy-free, if desired)

2 tablespoons coconut oil (melted)

Instructions

Prepare the Pan: Line an 8x8 inch baking dish with parchment paper, allowing some overhang for easy removal later.

Mix the Wet Ingredients: In a mixing bowl, add the peanut butter, maple syrup (or honey), vanilla extract, and melted coconut oil. Mix until well combined and smooth.

Add Dry Ingredients: In the same bowl, add the rolled oats, cocoa powder, and salt. Stir until all ingredients are fully incorporated and you have a thick batter. If the mixture is too dry, you can add a tablespoon of water or additional maple syrup to reach the right consistency.

Fold in Chocolate Chips: Gently fold in the dark chocolate chips until evenly distributed throughout the mixture.

Spread Mixture in Pan: Pour the mixture into the prepared baking dish, spreading it out evenly with a spatula.

Chill the Bars: Place the baking dish in the refrigerator for at least 2 hours, or until the mixture has firmed up.

Cut and Serve: Once chilled and set, use the parchment overhang to lift the bars out of the pan. Cut into squares or rectangles as desired. Enjoy your guilt-free treat!
