Hatch Chili & Beef Crockpot Chili

2 lbs ground beef (preferably lean)

4 cups fresh hatch green chilies, roasted, peeled, and chopped (or canned if unavailable)

1 large yellow onion, diced

4 cloves garlic, minced

1 can (15 oz) diced tomatoes (preferably fire-roasted)

2 cans (15 oz each) kidney beans, drained and rinsed

2 tbsp chili powder

1 tbsp cumin

1 tsp smoked paprika

1 tsp salt (adjust to taste)

1/2 tsp black pepper

1 cup beef broth

1 tbsp Worcestershire sauce

1 tsp olive oil

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Brown the Beef: In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, stirring frequently. Break up the meat with a spatula for even cooking. Drain excess fat if necessary.

    Prepare the Vegetables: In the same skillet, add the diced onion and minced garlic to the remaining beef juices. Sauté for about 5 minutes until the onions become translucent.

      Combine Ingredients: In the crockpot, layer the browned beef, sautéed onions and garlic, chopped hatch green chilies, diced tomatoes, kidney beans, chili powder, cumin, smoked paprika, salt, and black pepper.

        Add Liquids: Pour the beef broth and Worcestershire sauce over the mixture in the crockpot. Stir gently to combine all ingredients.

          Cook: Cover the crockpot with its lid. Set the temperature to low and cook for about 8 hours or on high for 4 hours. Stir occasionally if possible.

            Thicken the Chili (Optional): If you prefer a thicker chili, remove the lid for the last 30 minutes of cooking to allow some liquid to evaporate.

              Serve: Once cooked, taste and adjust seasoning if needed. Serve hot, garnished with fresh cilantro and lime wedges on the side.
