Hatch Chili Lentil Soup

1 cup green or brown lentils, rinsed and drained

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 medium carrot, diced

1 medium bell pepper, diced (preferably red or yellow for sweetness)

2 cups Hatch green chilies, roasted, peeled, and diced (adjust to heat preference)

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon dried oregano

½ teaspoon chili powder (optional, for extra heat)

1 can (14.5 ounces) diced tomatoes (with juice)

6 cups vegetable broth

Salt and pepper, to taste

Juice of 1 lime

Fresh cilantro, for garnish

Instructions
 

Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and carrot. Sauté for 4-5 minutes until the onion becomes translucent. Stir in the minced garlic and bell pepper, cooking for another 2-3 minutes until fragrant.

    Add Spices: Sprinkle in the ground cumin, smoked paprika, dried oregano, and chili powder (if using). Stir well to coat the vegetables with the spices and cook for 1-2 minutes to release the flavors.
