Ingredients

8 oz elbow macaroni

2 tablespoons unsalted butter

1 tablespoon olive oil

1 medium yellow onion, diced

3 cloves garlic, minced

2 cups roasted Hatch green chilies, diced (fresh or canned)

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

2 cups whole milk

8 oz sharp cheddar cheese, shredded

4 oz pepper jack cheese, shredded

1/4 cup grated Parmesan cheese

Salt and black pepper to taste

Fresh cilantro or parsley, for garnish (optional)

1 cup breadcrumbs (optional for topping)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Sauté the Aromatics: In a large skillet, melt the butter and olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and sauté for another minute until fragrant.

Add the Chilies and Spices: Incorporate the diced Hatch green chilies, ground cumin, smoked paprika, and cayenne pepper into the skillet. Stir well and let it cook for about 2-3 minutes, allowing the spices to bloom.

Make the Cheese Sauce: Pour in the whole milk, stirring continuously. Bring the mixture to a gentle simmer. Once simmering, gradually add the sharp cheddar and pepper jack cheeses, stirring until melted and smooth. Season with salt and black pepper to taste.

Combine Pasta and Sauce: Add the cooked elbow macaroni to the cheese sauce, mixing until the pasta is thoroughly coated.

Optional Breadcrumb Topping: If desired, preheat your oven's broiler. Transfer the macaroni mixture to a greased oven-safe skillet or dish. Sprinkle the grated Parmesan cheese and breadcrumbs evenly on top. Broil for 2-3 minutes until the topping is golden brown and crispy.

Garnish and Serve: Remove from the oven and let it cool for a minute. Sprinkle fresh cilantro or parsley on top for a pop of color. Serve hot and enjoy your flavorful Hatch Chili Mac and Cheese!
