2 medium sweet potatoes, cubed

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1-2 fresh Hatch green chilies, diced (adjust for heat preference)

1 bell pepper, diced (red or yellow for sweetness)

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

½ cup black beans, drained and rinsed

½ cup corn (frozen or fresh)

2 tablespoons fresh cilantro, chopped (optional)

1 avocado, diced (for garnish)

Crumbled feta or cotija cheese (for garnish, optional)

Instructions
 

Prepare Sweet Potatoes: In a large skillet, heat the olive oil over medium heat. Add the cubed sweet potatoes and sauté for about 5 minutes until they begin to soften.

    Add Aromatics: Stir in the diced onion and garlic, cooking for another 3-4 minutes until the onion is translucent.

      Mix in Chilies & Spices: Add the diced Hatch chilies, bell pepper, ground cumin, smoked paprika, salt, and black pepper. Stir to combine and let cook for an additional 5 minutes, allowing the flavors to meld.

        Incorporate Beans and Corn: Gently fold in the black beans and corn. Cook for another 5-7 minutes, stirring occasionally, until the sweet potatoes are tender and the beans and corn are heated through.
