2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup Hatch green chiles, roasted and chopped (canned or fresh is fine)

1 medium onion, diced

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

8 corn tortillas

1 cup crumbled queso fresco or shredded cheese (cheddar or Monterey jack)

1/4 cup fresh cilantro, chopped

1 avocado, sliced (for topping)

Lime wedges (for serving)

Instructions
 

Heat the Oil: In a large skillet, heat the olive oil over medium heat.

    Sauté Onion and Garlic: Add the diced onion and sauté for about 3-4 minutes until they become translucent. Then, add minced garlic and cook for an additional minute until fragrant.

      Add Chicken and Spices: Stir in the shredded chicken, chopped Hatch green chiles, cumin, smoked paprika, chili powder, salt, and black pepper. Mix well to combine all ingredients and let it cook for about 5–7 minutes until heated through.

        Warm the Tortillas: In a separate pan, warm the corn tortillas over medium heat for about 30 seconds on each side until they are pliable. You can also wrap them in foil and warm them in the oven if preferred.

          Assemble the Tacos: Place a generous spoonful of the chicken mixture onto each tortilla. Top with crumbled queso fresco, chopped cilantro, and avocado slices.
