Ingredients

1/2 cup balsamic vinegar

1/2 cup extra virgin olive oil

1 tablespoon Dijon mustard

2 teaspoons honey or maple syrup (for a vegan option)

1 clove garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and black pepper to taste

Optional: 1 tablespoon freshly chopped herbs (like parsley or thyme) for added flavor

Instructions

Combine Ingredients: In a medium-sized bowl or a mason jar, add the balsamic vinegar, Dijon mustard, honey or maple syrup, minced garlic, dried oregano, and dried basil.

Mix the Dressing: Whisk the mixture together until well-combined, or if using a jar, secure the lid and shake vigorously until the ingredients are blended.

Add Olive Oil: Slowly drizzle in the extra virgin olive oil while continuously whisking (or keep shaking the jar) to create an emulsion.

Season: Taste the vinaigrette and season with salt and black pepper to your preference. If desired, stir in the freshly chopped herbs for extra freshness.

Store: Pour the vinaigrette into a sealed jar or an airtight container. Let it sit for at least 15 minutes before serving to allow the flavors to meld. Shake well before using.

Serve: Drizzle over salads, roasted vegetables, or use as a marinade for grilled proteins.
