Ingredients

1 lb (450g) Italian sausage (sweet or spicy, based on preference)

1 medium onion, diced

3 cloves garlic, minced

3 carrots, diced

2 stalks celery, diced

1 small head of green cabbage, chopped

1 can (15 oz) white beans (cannellini or great northern), drained and rinsed

4 cups low-sodium chicken or vegetable broth

1 can (14.5 oz) diced tomatoes, undrained

1 teaspoon dried thyme

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional, for heat)

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley or thyme for garnish

Instructions

Brown the Sausage: In a large pot or Dutch oven, heat the olive oil over medium heat. Remove the sausage from its casing and add to the pot. Cook, breaking it apart with a wooden spoon, until browned and cooked through, about 5-7 minutes. Remove the sausage and set it aside, leaving some drippings in the pot.

Sauté Vegetables: In the same pot, add the diced onion, carrots, and celery. Sauté for about 5 minutes, or until the vegetables are softened. Add the minced garlic and cook for another 1-2 minutes until fragrant.

Add Cabbage and Seasonings: Stir in the chopped cabbage, thyme, oregano, and red pepper flakes (if using). Cook for another 3-4 minutes, allowing the cabbage to wilt slightly.

Combine Ingredients: Return the browned sausage to the pot, then add the drained white beans and diced tomatoes, followed by the broth. Stir everything together, ensuring the ingredients are well distributed.

Simmer the Stew: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 30-40 minutes, stirring occasionally, until the cabbage is tender and the flavors meld together. Adjust seasoning with salt and pepper to taste.

Serve and Garnish: Once the stew is ready, ladle it into bowls and garnish with fresh parsley or thyme for a burst of color and flavor. Enjoy this hearty stew with crusty bread or over a bed of rice for a fulfilling meal.
