1 cup all-purpose flour

1/2 cup unsalted butter, softened

1/4 cup granulated sugar

1/4 cup brown sugar, packed

1/2 teaspoon baking powder

1/4 teaspoon salt

1 teaspoon vanilla extract

1 large egg

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 tablespoon lemon juice

For the Fruit Topping:

1 cup sliced strawberries

1 cup diced kiwi

1 cup pineapple chunks

1 cup blueberries

1 banana, sliced

Optional: fresh mint leaves for garnish

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Make the Cookie Crust:

      - In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until creamy.

        - Mix in the egg and vanilla extract until well combined.

          - In a separate bowl, whisk together the flour, baking powder, and salt.

            - Gradually add the dry mixture to the wet ingredients, mixing until a dough forms.

              Shape and Bake:

                - Spread the dough evenly onto a pizza pan or a round baking sheet, forming a circle about 1/4 inch thick.

                  - Bake for 12-15 minutes or until lightly golden. Remove from the oven and let cool completely.

                    Prepare the Cream Cheese Frosting:

                      - In a medium bowl, beat the softened cream cheese with powdered sugar, vanilla extract, and lemon juice until smooth and fluffy.

                        Assemble the Pizza:
